Chilled Watermelon Gazpacho

Happy Saturday, Soupers! Goodness it’s hot! If you’re experiencing rising temps wherever you are, AND if you’re like me, you’re looking for any and every excuse not to turn on that darn oven. We’ve got you covered with this incredibly refreshing Watermelon Gazpacho!

We adapted this recipe from the GimmeSomeOven website, and it’s a winner! And, you know what the best part is, right? You combine all of the ingredients and just throw them all in the blender! That’s it! Once it’s blended, just added to a bowl and chill in the fridge for at least an hour and you’ve got magic that even your little ones and big ones will eat (drink).

Yes! It’s so good and cool, you serve it in a cup. My favorite part is the little tang and heat you get with all that fruity goodness. Paired with grilled cheese sandwiches and a little Cole slaw, this gazpacho proved to be the perfect lunch option. So, go ahead, give it try.

Ingredients

Measurement Conversion Chart

1 fresh watermelon wedge and seeds removed

1 cup strawberries

1 small beet

1 shallot chopped

1 can crushed tomatoes

1 small cucumber, peeled and seeded

1 small zucchini (yellow or green), peeled and chopped

1 medium red bell pepper, cored

1 chili pepper, cored and chopped

1/4 small red onion, peeled

2 small garlic cloves, peeled

1/8 cup fresh mint leaves

3 tablespoons olive oil

3 tablespoons balsamic vinegar

1/8 teaspoon of ground ginger

Pinches of sea salt and black pepper

1/8 teaspoon ground cumin

1/8 teaspoon basil

1/8 teaspoon parsley

A splash of lemon juice

A splash of lime juice

Pinch of sugar

Garnishes: chopped fresh mint, a drizzle of olive oil, and/or any leftover chopped gazpacho ingredients
