Beef Goulash Soup

Happy Friday, Soupers! Hope you’re all safe and doing well this Covid-19 quarantine. Beef Goulash soup is on tonight’s menu and man, do we love paprika and shhhh….there’s little white wine in there. This meal is such a little thing but these days, it means so much.  After having some authentic Beef Goulash soup in Budapest a couple of years ago, we could never do this recipe justice.  But, the family enjoyed our version nonetheless and it’s a fairly quick meal to make.

Ingredients

Measurement Conversion Chart

1 tablespoon olive oil
1 large onion, halved and sliced
3 garlic cloves, sliced
1 lb beef, finely diced
2 teaspoons smoked paprika
1 tablespoon balsamic vinegar
1 can chopped tomatoes
2 medium potatoes, peeled and diced

Instructions

  1. Heat the oil in a large pan, add the onion and garlic, and fry for 5 mins until starting to colour. Stir in the beef, increase the heat and fry, stirring, to brown it.
  2. Add the paprika and balsamic vinegar, stir well, then add in the tomatoes and stock. Cover and leave to cook gently for 30 mins.
  3. Stir in the potato, cover and cook for 20 mins more or until tender. Allow to cool and serve.
