Beef Goulash Soup
Happy Friday, Soupers! Hope you’re all safe and doing well this Covid-19 quarantine. Beef Goulash soup is on tonight’s menu and man, do we love paprika and shhhh….there’s little white wine in there. This meal is such a little thing but these days, it means so much. After having some authentic Beef Goulash soup in Budapest a couple of years ago, we could never do this recipe justice. But, the family enjoyed our version nonetheless and it’s a fairly quick meal to make.
Ingredients
1 tablespoon olive oil
1 large onion, halved and sliced
3 garlic cloves, sliced
1 lb beef, finely diced
2 teaspoons smoked paprika
1 tablespoon balsamic vinegar
1 can chopped tomatoes
2 medium potatoes, peeled and diced

Instructions
- Heat the oil in a large pan, add the onion and garlic, and fry for 5 mins until starting to colour. Stir in the beef, increase the heat and fry, stirring, to brown it.
- Add the paprika and balsamic vinegar, stir well, then add in the tomatoes and stock. Cover and leave to cook gently for 30 mins.
- Stir in the potato, cover and cook for 20 mins more or until tender. Allow to cool and serve.
